The Worlds Best Beef Burger

These are the worlds best beef burgers (in my completely ubiased opinion) and I’m going to teach you how to make them. 

The secret to great burgers is to start with quality beef and then to enhance the flavour with a few simple ingredients. Make sure you use regular mince, not the lean mince variety as you’ll miss out on all the delicious flavour the fat adds to the burger.

Say it with me, “fat equals flavour”. The keto crowd know what I’m talking about.

Five more tips to make your burgers truly world class. 

  1. When making these burgers make sure you let them sit for at least an hour in the fridge (or ideally overnight), as this will allow the flavour to develop.
  2. Season your burgers with both salt and cracked pepper when the time comes to cook them. Don’t season them ahead of time.
  3. Make them chunky. A good burger should weigh about 250 grams. 
  4. Flip the burgers once, and only once when cooking. Also please don’t squish them down to make them cook ‘faster’ as all this does is squeeze out the delicious juices.
  5. 3 to 4 minutes of cooking per side should be sufficient for a good chunky burger. A slight pink colour in the centre is perfectly fine. 
Finally, one bonus tip to make your guests think you’re some sort of internationally reknowned burger chef. Buy a burger press. These allow you to press your mince into neat round patties that look great on a plate.

Ingredients:

  • 1kg fatty beef mince
  • 1 Onion (diced)
  • 2 garlic cloves
  • 1 tablespoon fresh mixed herbs
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons coconut aminos
  • 3 eggs
  • sea salt and ground black pepper.

Instructions:

  1. Mix the beef mince and all other ingredients in a bowl.
  2. Form into 8 equal size burgers.
  3. Cover and leave in the fridge for at least an hour (or overnight).
  4. Season with salt and pepper and place on a hot grill.
  5. Cook the beef burgers for 3-4 minutes each side.
  6. Enjoy!

Fast and Easy Keto Breakfast

When looking for breakfast ideas on the internet, I notice that authors sometimes get a bit caught up trying to create something unique.

In an attempt to stand out from the crowd they incorporate clever techniques and unusual ingredients into their recipes.

I’m not interested in becoming a chef. I just want to fill my belly with something tasty. 

Here is one of my go to breakfast options. It’s quick, flavourful, and utilises easily found ingredients.

Fast and Easy Keto Breakfast

Ingredients:

  • 1 Avocado
  • 180 gram block of Feta
  • 2 eggs
  • 4 rashes of Bacon
  • 150g Beetroot, Feta and Cashew Dip (feel free to choose something else.)

Instructions:

  1. Mash the avocado and half the block of Fetta together in a bowl.
  2. Cook the Bacon.
  3. Poach or Fry the eggs.
  4. Place a generous dollop of Beetroot dip on two plates.
  5. Split the Feta/Avocado mix between the two plates..
  6. Add 2 rashes of cooked bacon to each plate.
  7. Top with the cooked egg
  8. Enjoy!

For simple recipes like this dessert, it’s important to get quality ingredients so that their individual flavours really shine.

Fresh in-season blueberries and organic cream make this simple dish something special.

Ingredients:

  • 1/2 Cup Blueberries (fresh or frozen).
  • 1/4 Cup Organic Thickened Cream.

Instructions:

  1. Combine and serve.
  2. If using frozen berries, combine the ingredients and pop them in the fridge until the berries are defrosted.

Refreshing low carb drinks.

Sparkling Herbal Tea

Ingredients:

  • 1.25 L bottle of mineral/sparkling water.
  • 1 teabag of your preferred herbal tea (I recommend something fruity).

Instructions:

  1. Open the bottle of mineral water, insert the teabag (remove any label) and screw the lid back on.
  2. Put the bottle in the fridge until chilled.
  3. Pour a glass and enjoy.

Balls of Meat

Ok, so it’s not my most creative title.

This will make a big pile of balls of meat, just throw them into your lunchbox with some salad with your choice of dressing and you’re ready to go.

Ingredients:

  • 1kg mince meat.
  • 2 cloves garlic.
  • 3 eggs.
  • 4 rashes of Bacon. (without the rind) diced.
  • 1 tablespoon of mixed herbs.
  • 2 tablespoons of worchester sauce (I like the spicy version).
  • Salt to taste.

Instructions:

  1. Pre-heat the oven to 180 degrees (fan forced).
  2. Place all the ingredients in a bowl and mix together (easiest to do with your hands).
  3. Shape into about 18 golf ball size balls.
  4. Cook in oven for 25 mins or until cooked through.
  5. Enjoy with a fresh salad and dressing of choice.

Serves: 3-4 balls per serve

Keto Breakfast Slice

Make your mornings easier with this Keto Breakfast Slice

This Keto Breakfast Slice is my solution to a busy morning. It’s simple, filling, can be made ahead of time, and can be easily reheated in the microwave (about 1 minute on high should be sufficient).

If you’re a fat adapted beast and are in the habbit of skipping breakfast then these also make a great lunch. Just serve with a simple side salad and you’re good to go (and go).

Feel free to change up this recipe based on whatever vegetables you happen to have available. Just remember that if you’re on the keto diet that you’ll want to include veges like onion, brocolli, brussel sprouts and mushrooms because they are lower in carbs. If you’re more paleo inclined then add some sweet potatoes or pumpkin into the mix.

Once cooked, you can wrap up and freeze individual portions in the freezer so that you’ve always got a healthy option ready for breakfast.

Keto Breakfast Slice

Ingredients:

  • 6 wheat free sausages – sliced
  • 500g diced pumpkin
  • sliced red onion
  • 250g mushrooms
  • 4 carrots sliced
  • handful of brussel sprouts (or other green veg) sliced in half
  • Minced garlic
  • 1 tbsp Ghee (or fat of choice) melted
  • Salt and pepper to taste
  • 10 eggs
  • mixed herbs
  • Block of Feta Cheese

Instructions:

  1. Couldn’t be easier. Preheat oven to 180 degrees celsius. Combine all the ingredients except for the eggs, sausage and fetta and place in a deep roasting tray.
  2. Cook until vegetables are roasted.
  3. Remove from the oven and allow to cool.
  4. Chop up the sausage into bite size pieces and mix into the vegetables
  5. Whisk the 10 eggs and pour over the vegetable mix, sprinkle the feta on top.
  6. Return to the oven and cook until egg is set.
  7. Remove from the oven and cut into slices.

Chicken With Basil Pesto And Zoodles.

I came up with this combination when a friend of mine who had recently completed radiation therapy for a cancer in his mouth dropped by for a vist. The radiation treatment profoundly affected his ability to taste certain foods and so I thought using a flavourful basil pesto for the base of this dish might work for him.

He loved it.

We also shared some spiced mead afterwards that also went down a treat. 

Chicken with basil pesto and zoodles.

Ingredients:

  • 3 medium zucchini, sliced into noodles using a spiralizer (you could also use a vegetable peeler)
  • 1 cup cooked and shredded chicken
  • 1/4 cup sun-dried tomatoes thinly sliced
  • 2 cups fresh basil
  • 1 cup parsley
  • 1 medium avocado
  • 1/3 cup roasted pine nuts
  • 2 cloves garlic
  • 2 TBSP lemon juice
  • 1 TBSP extra virgin olive oil
  • water
  • Salt and Pepper to taste

Instructions:

  1. In a large bowl, toss the zucchini noodles with the chicken and sun-dried tomatoes.
  2. In a food processor fitted with a steel blade, combine the basil, parsley, avocado, pine nuts, garlic, lemon juice, and olive oil. Process until combined. With the processor running, add just enough water to make a smooth but not runny sauce. Season with salt and pepper to taste.
  3. Toss the sauce with the zucchini to coat. Serve immediately.
Serves: 2
